Oil Free Salad Dressing

 

Makes 1 Cup

Calories: 548 per cup 

 

INGREDIENTS

1/4c raisins

1/4c balsamic vinegar

1/2c water

1 tsp dijon mustard

1 garlic clove, chopped

1/4 tsp thyme

1/4c walnuts, chopped

 

INSTRUCTIONS

Add all together into blender or food processor and blend until well combined! Enjoy

Yogurt Lemon Dressing

INGREDIENTS

1 tbsp unsweetned Greek or natural yoghurt (can use coconut for dairy free)

1 tbsp lemon juice

 

INSTRUCTIONS

Mix and serve! 

5 minute Hummus

INGREDIENTS

1 can chickpeas, drained and rinsed

1 clove garlic roasted

1/4C tahini

Juice of one lemon

Pinch ground cumin

Pinch ground pepper

1T olive oil

1T water

 

INSTRUCTIONS

Add all ingredients to a blender, blend untill smooth. Taste and adjust seasonings and ingredients as desired.

Beet Hummus

 

Makes 2 cups

 

 

INGREDIENTS

4 medium sized beets, scrubbed clean, cooked, peeled, and cubed*

2 Tbsp tahini sesame seed paste

5 Tbsp lemon juice

1 small clove garlic, chopped

1 Tbsp ground cumin

1 Tbsp lemon zest (zest from approx. 2 lemons)

Generous pinch of sea salt or Kosher salt

Fresh ground pepper to taste

 

*To cook the beets, cut off any tops, scrub the roots clean, put them in a covered dish with about 1/4­inch of water in a 190°C/375°F oven, and cook until easily penetrated with a knife or fork. Alternatively, cover with water in a saucepan and simmer until tender, about 1/2 hour. Peel once they have cooled.

 

INSTRUCTIONS

  1. Place all ingredients in a food processor (or blender) and pulse until smooth. Taste and adjust seasonings and ingredients as desired.

 

  1. Chill and store in the refrigerator for up to 3 days or freeze for longer storage.
