Lasagna Soup

Lasagna Soup (Can also be done on stove)
Serves 4

Ingredients:
1 Tbsp EVOO
200g lean beef mince
1 onion diced
2 cloves garlic minced
1 cup kale leaves
2 carrots grated
2 zucchini grated
4 cups beef stock
2 cups tomato passata
4 dried lasagna sheets
1/2 cup ricotta cheese
2 tsp lemon zest
1/2 tsp dried thyme
2 tsp parmesan, grated

Instructions:
1. Add everything except ricotta, lemon zest, thyme, parmesan & lasagna & cook on high for 4 hours or low 8 hours.
2. If you prefer browned meat you can fry mince & onion 1st then add.
3. With 40 mins to go break up lasagna sheets & add them.
4. Combine ricotta, lemon zest & thyme.
5. To serve top with ricotta mix & parmesan.
