21 Jan Coconut Bars

INGREDIENTS
- 2 cups raw almonds
- 1 cup shredded coconut
- 3 pitted fresh medjool dates
- 1 cup almond butter, melted
- 2 tablespoons maple syrup
- 1 cup dark chocolate chips
DIRECTIONS
- Combine almonds, coconut and dates in a food processor and blend until crumbly, set aside.
- Add almond butter and maple syrup to a mixing bowl and melt in your microwave for about 30seconds.
- Add almond mixture to the almond butter mixture and mix until well combined.
- Press mixture into a 20x20cm lined baking dish.
- Place in the fridge for 30mins +.
- Place chocolate chips in a microwave proof bowl and heat for 30 seconds at a time until the chocolate is melted. Evenly spread the chocolate over the bars and refrigerate again for 1hr +, until firm.
- Once fully set, remove from the fridge and cut into bars.
- Store bars in the fridge.
