Coconut Bars

INGREDIENTS

  • 2 cups raw almonds
  • 1 cup shredded coconut
  • 3 pitted fresh medjool dates
  • 1 cup almond butter, melted
  • 2 tablespoons maple syrup
  • 1 cup dark chocolate chips

 

DIRECTIONS

  1. Combine almonds, coconut and dates in a food processor and blend until crumbly, set aside.
  2. Add almond butter and maple syrup to a mixing bowl and melt in your microwave for about 30seconds.
  3. Add almond mixture to the almond butter mixture and mix until well combined.
  4. Press mixture into a 20x20cm lined baking dish.
  5. Place in the fridge for 30mins +.
  6. Place chocolate chips in a microwave proof bowl and heat for 30 seconds at a time until the chocolate is melted. Evenly spread the chocolate over the bars and refrigerate again for 1hr +, until firm.
  7. Once fully set, remove from the fridge and cut into bars.
  8. Store bars in the fridge.
