• 1 egg
• 1/2 cup (100g) fresh or frozen mixed vegetables
• 1 cup of cooked brown rice (or rice of your choice, can use a quick cup)
• 1/2 small (50g) onion diced or 1 spring onion, chopped
• 1 tablespoon soy sauce
• 1 garlic clove, crushed
• 1 tablespoon cashew nuts
• 1 teaspoon oil or spray oil
1 Heat a large, non-stick frying pan over a medium heat. Spray with oil then fry onions (or spring onions) for 1-2 minutes. Add frozen vegetables and fry for a couple more minutes until cooked through.
2 Add rice, cashews, and soy sauce to pan and stir to combine.
3 Heat for a few minutes more then serve.
