Luau Slow Cooked Pork

Serves: 5 (1 serve leftovers)

Time to make: 7-10hrs

INGREDIENTS 

Pork:

  • 1kg bone-in pork shoulder
  • 1/2 tablespoon natural liquid smoke flavour
  • 1/2 tablespoon salt
  • 1 teaspoon EVOO

To Serve:

  • 5 serves cauliflower rice
  • 1/2 fresh pineapple (or use canned), sliced
  • 120g mixed lettuce/greens
  • 5 tablespoons EVOO

 

DIRECTIONS

  1. Heat oil in a large pot over medium high heat. Dab pork dry with paper towels, then sear it in the pot for 3mins per side to brown.
  2. Place pork in a slow cooker. Drizzle with liquid smoke on both sides. Season both sides with salt.
  3. Cover and cook on low for 6-10hrs until incredibly tender!
  4. Meanwhile prepare your rice.
  5. Transfer it to a cutting board, shred the pork with two forks while removing the bone and excess fat.
  6. Toss the pork with about 120ml of the reserved liquid broth from the slow cooker. 
  7. Serve with rice, fresh pineapple and mixed lettuce drizzled with olive oil.
  8. Enjoy!
