  • 2/3 head cauliflower, cut into florets
  • 40ml avocado oil
  • Pinch salt and pepper
  • 160g sour cream
  • 60ml cream
  • 4 teaspoons Dijon mustard
  • 3 cloves garlic, minced
  • 160g cheddar cheese, shredded
  • 450g shredded, cooked chicken
  • 230g champagne ham, chopped
  • 600g mixed veg (broccoli, corn, peas, carrots etc)


  1. Preheat oven to 200C.
  2. Toss the cauliflower with the oil in a bowl, and season with salt and pepper.
  3. Arrange the cauliflower on a baking sheet with baking paper and roast for 25-30mins, until golden.
  4. Meanwhile, stir together the sour cream, cream, mustard, garlic and half of the cheese. Stir in the chicken and ham.
  5. Once the cauliflower is done, remove from the oven, keeping the oven hot.
  6. Stir the cauliflower into the bowl with the chicken and ham, adjust seasoning to taste.
  7. Prepare the mixed veg to your liking – boiled, steamed etc
  8. Transfer the mixture to a casserole dish, sprinkle with the remaining cheese and bake it for 19mins, until the cheese is melted. Change the oven to grill for the last 2-3mins to brown the top.
  9. Serve hot with a side of mixed veg.
