Pizza Bake

This is perfect for pizza lovers and cheese lovers who feel like they’re missing out (trust me!!)
Serves 6
320 cals per serve
Ingredients:
8 (950g) med potatoes
12 slices (240g) lean smoked ham
1 cup (50g) kalamata olives
1 (100g) red onion, thinly sliced
1 (100g) red capsicum, thinly sliced
1 3/4 cups (400ml) passata
1 1/2 cups (240g) reduced fat mozzarella cheese
Instructions:
1. Preheat oven to 190C
2. Lay 1/3 potatoes on bottom of a baking dish
3. Top with 1/3 of the ham, olives, onion, capsicum, passata and cheese
4. Repeat to create 3 layers, topping with cheese
5. Cover with baking paper then tightly wrap with foil or a lid
6. Bake for 60 mins, remove foil & paper and cook for another 15 mins until golden
7. Divide between 6 serves
8. Any leftover serves can be frozen or stored in fridge in airtight container for 2-3 days
