Simone’s Retreat ‘Cheesecake’

  • 35g raw cashews
  • 35g coconut yogurt
  • 1 tablespoon maple syrup
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Base & Toppings

  • 20g homemade granola
  • Fresh or frozen berries



  1. Place the granola in your blender and blend until it turns into small crumbles.
  2. Add the granola to the bottom of the jar and clean your blender.
  3. Add the ‘cheese’ ingredients to the blender and blend until smooth & creamy.
  4. Add the ‘cheese’ mixture to the jar and top with your preferred berries. 
  5. Enjoy!
